Apple Salad Recipe – Vickie T.

- (1) 20 oz can crush pineapple, undrained
- (1/2) Cup Splenda
- (1) Package sugar free lemon Jell-O (dry)
- (1) 3 oz. package cream cheese, softened (1/3 less fat)
- (1) Cup diced celery
- (3) Cups diced, unpeeled apples
- (1/2) Cup chopped nuts (more if desired)
- Combine Splenda and pineapple in saucepan. Bring to a boil and boil for 3 minutes.
- Remove from heat. Stir in Jello-O (dry) until dissolved.
- Add cream cheese and stir until thoroughly combined. Cool.
- Fold in apples, celery, and chopped nuts.
- Pour into a 9-inch square dish or bowl and chill in refrigerator until firm.
